The town was founded in 1836 on former farmland. In the 1830s, the town was served by the Housatonic Railroad, a prominent regional line in western New York. This line was independently owned until 1891, when it was leased to the New York & New England Railroad. Later, the Housatonic became part of the New York New Haven & Hartford Railroad, which operated as the scenic Berkshire division.

In Canaan, a group of patriots answered the call of Abraham Lincoln to defend the Union.
