The average age of all residents was 38 years old, with the median age of foreign-born citizens being 40 years old. Eagan is becoming younger as people live longer. In 2018, the average age of all residents was 38 years old. The most common country of birth for Eagan city residents was Mexico, with 61,714 being native born. Originally, Eagan was an Irish-American farming town, with a reputation as the "Onion Capital of the United States". In the 20th century, the town expanded to become the eighth largest city in Minnesota. Its growth was fueled by the relocation of Highway 77 and construction of a six-lane bridge over the Minnesota River in 1980. In the 1990s, the city was located near the southbound portion of the Interstate 35E freeway, a short distance from Mendota Heights. Today, it is located along Minnesota State Highway 3 and Interstate 494.

The first chairman of the town board, Patrick Eagan, tamed a 220-acre parcel of land near the present-day town hall. Eagan residents were first married in 1843 and moved to the United States in 1853. Patrick and Margaret Eagan arrived in Mendota in 1853-1854. The Eagan City Historical Society has an impressive archive of local history.
