Beeville was first incorporated in 1890, but it was dissolved the next year. In 1890, the population was 2,311 and the city incorporated again in 1908. The town had a mayor-aldermanic government until 1951 when it transitioned to a council-manager government. Beeville grew during the early twentieth century and had two general stores, two hotels, a gristmill, and a gin.
The city first skyscraper, the Grand Opera House, was built in 1907. It was designed by W. C. Stephenson and opened with a silent movie, The Three Musketeers. Today, it is used for special events. At its peak, the building held nearly a thousand people. There were a total of four loges and a balcony in the Grand Opera House.
In 2006, the Texas Historical Commission named Beeville as a "Main Street" city in Texas. This designation recognizes the city's historic downtown.
